Roasted Cauliflower

DAVID! This is so yummy!

I don't like cauliflower at all, but was going to try my godmother's recipe for pureed cauliflower ( looks like mashed potatoes, but less "carb-y" due to fiber).

Take a head of cauliflower, wash it, break it up into florets, put in a ziploc bag, mince two cloves of garlic, throw in the bag, add 3 tbsp of olive oil. Shake it up, put in a casserole dish and cook at 425 for 25 minutes, stirring in the middle at some point... Sprinkle with Pecorino Romano (or Parmesan) after you stir, then continue cooking.

I didn't hear the timer go off!

It caramelized. (burned)

It was the yummiest! I didn't even get to puree it, because it was SO delish right out of the oven!!!

Ingredients

Cauliflower
2 cloves garlic
3 tbsp olive oil
handful of pecorino romano

THIS WAS SO EASY!!!
